Leek, Mushroom and Bacon Orzo Pasta

I’ve recently discovered orzo pasta and love it! So easy to cook and versatile to use with your favourite flavours. This one pan dish is perfect for weekday dinners and will double up for lunch the next day. This recipe will make around 2-3 servings but you can double the recipe if you need.

Ingredients

1 leek
1 cup frozen peas
6-8 medium mushrooms
250g orzo pasta
750ml vegetable stock
3-4 slices of bacon or pancetta
squeeze of lemon juice
black pepper to season
2-3 handfuls of parmesan cheese

Method

  1. Thinly slice the leeks and fry in some butter until soft

  2. Add the sliced mushrooms, peas and chopped bacon, cook through

  3. Add the pasta, squeeze of lemon juice and stock, stir thoroughly. Bring to a simmer, cover and stir occasionally until the pasta is cooked. You may need to add more water depending on the pasta.

  4. Once cooked season and stir through the grated parmesan.

  5. Serve and enjoy!
