Overnight Oats Three Ways

For those of you that follow me on social media, you’ll know I’m a big fan of overnight oats. They’re quick and easy to make the night before so those early morning starts are made a little easier when breakfast is ready to grab and go. You can make these up in some tupperware so they’re perfect to take with you to work as well. You’ll often catching me eating mine in the car in between clients. All of these recipes contain at least one portion of fruit and protein to keeping you going to lunchtime. The beauty of overnight oats is you can really get creative with your flavours and top them with your favourite things.

Mango, Passionfruit and Coconut

1 cup of oats
2-3 tsp chia seeds
2-3 tsp ground flax seeds
1 passionfruit (scoop out the inside)
100-150ml coconut kefir
1 heaped tbsp greek yoghurt
coconut milk
To Top: Diced fresh mango and seed mix

Mix all the ingredients together except the toppings and coconut milk. Once mixed well, add enough coconut milk to make a thick mixture and add a little extra as the liquid will be absorbed. Top with fresh mango and seeds and refrigerate overnight.

Apple and Raisin

1 cup oats
1 apple grated
2-3 tsp chia seeds
2-3 tsp ground flax seeds
2 tbsp greek yoghurt
1 tsp cinnamon
almond milk
To top: Chopped nuts and biscoff spread

Mix all the ingredients together, except the toppings and milk. Once mixed well, add enough almond milk to make a thick mixture and add a little extra as the liquid will be absorbed. Top with chopped nuts and biscoff spread and refrigerate overnight.

Blackberry and Blueberry

1 cup oats
2-3 tsp chia seeds
2-3 tsp ground flax seeds
2 tbsp greek yoghurt
Almond milk or milk of your choice
To Top: handful of frozen blackberries and blueberries and peanut butter

Mix all the ingredients together, except the toppings and milk. Once mixed well, add enough almond milk to make a thick mixture and add a little extra as the liquid will be absorbed. Top with frozen berries and peanut butter and refrigerate overnight.
