Carrot Cake Baked Oats Recipe

So the weather has definitely taken a turn and those cold mornings are creeping in. That means I’m back to warm porridge rather than overnight oats straight from the fridge. I’ve been experimenting with some new flavours and wanted to try something a little more Autumnal. They’re super tasty and you get one of your veggies in there! They may sound a little odd but don’t knock until you’ve tried it. I’ve topped mine with yoghurt and peanut butter but you could get creative with this too. Enjoy!

Ingredients
Half medium carrot
40-50g oats
1 tbsp chia seeds
2 tsp cinnamon
vanilla essence
small handful dried raisins and cranberries
milk of your choice
greek yogurt and peanut butter to top

Method

  1. Preheat the oven to 180 degrees

  2. Finely grate the carrot into a mixing bowl

  3. Add all the dry ingredients to the bowl and mix together

  4. Add a few drops of vanilla essence and pour over the milk so it just covers the mixture. It wants to thick not too runny

  5. Lightly grease a shallow oven proof dish (I used butter) and add the mixture

  6. Bake in the oven for 25-30 minutes, until the top is crispy but the center still soft

  7. Top with greek yoghurt and a dollop of peanut butter. Enjoy!
