Apple and Blackberry French Toast Bagels Recipe

Apple and blackberry has to be one of my favourite combinations especially through the Autumn. My Mum and Dad’s freezer is packed full of blackberries from their allotment so I’ve been getting creative with them. I came up with this super tasty breakfast or brunch recipe for those lazier mornings. It’s like a big hug in the morning, enjoy!
This recipe is for one portion but can easily be made for more.

Ingredients
cinnamon and raisin bagel
2 eggs
splash of milk
cinnamon
greek yoghurt
1/2 cooking apple
large handful frozen or fresh blackberries

Method

  1. Peel the apple and cut half of it into chunks. Add to a small pan with a sprinkling of cinnamon and a dash of water. Put the pan on a medium heat to stew. Keep an eye on this and mix to prevent the apples sticking.

  2. Whilst the apples are cooking, whisk the eggs with a splash of milk and a sprinkling of cinnamon. Pour the mixture into to a shallow dish or plate

  3. . Cut the bagel in half and soak in the egg mixture on both sides.

  4. Add a little butter to a frying pan on a medium heat. Once hot add the bagels.

  5. Cook the bagels until lightly golden and crispy on each side.

  6. Whilst the bagels are cooking, add the blackberries to the apples (they should now be soft) and stew for a few minutes longer.

  7. Serve by pouring the stewed fruit over the bagels and top with a dollop of greek yoghurt. Enjoy!
