Apple and Blackberry Baked Oats Recipe

The apple and blackberry combo strikes again. I really do love these flavours, last week it was french toast this week it’s baked oats. It’s filling, warm and full of nutrients to get your day off to a great start. This recipe takes a little more time in the morning but you can always make it the night before and reheat in the morning to save on time.
As a nation we’re not getting enough fibre in our diets, on average around 18g when it should be closer to 30g! That’s quite a gap but this recipe is packed full of it and tastes great too. Don’t forget to let me know if you give it go.

Ingredients

40-50g oats
half a cooking apple
handful of frozen/fresh blackberries
2 tsp chia seeds
cinnamon
milk of your choice

Method

  1. Pre-heat the over to 180 degrees

  2. Add the oats, chia seeds and a good sprinkling of cinnamon to a bowl and mix well

  3. Peel half a cooking apple and grate into the mixture, mix

  4. Pour over your milk (I usually use almond but any milk will work) to almost cover the mixture and stir well. You want a thick mixture, the juice from the apple and blackberries will add more moisture too

  5. Lightly grease an oven proof dish and add the mixture

  6. Push the blackberries into the top of the mixture and place in the oven for around 30 minutes.

  7. Top with your favourite nut butter (I’m currently obsessed with Pip and Nut’s pumpkin spice almond butter). Enjoy!
