Warm Kale and Halloumi Salad Recipe

It appears that the warmer weather is slowly trying to creep back into our lives and the sun has had it's hat on (even if it was only for a short time). The sunshine has got me starting to crave salads again but I still wanted something warm, rather than a fresh crispy salad. Cue a new recipe. 

I threw this together last week and have eaten it pretty much everyday since for lunch. The recipe below serves ones but you can easily double up for more people. I've been having this for lunch but if you wanted to make it a dinner meal you could always roast some sweet potato chunks and add some grilled chicken for a bigger serving.

Ingredients

3-4 large handfuls of curly kale
10 cherry tomatoes
1/4 red pepper
1 handful mangetout
3 slices of halloumi
Balsamic glaze to dress
Chilli flakes (optional)

Method

  1. Add a little oil to a frying pan and bring to a medium heat. Dice the pepper and add to the pan along with the mangetout. Cook for 2-3 minutes. 
  2. Add the kale and continue to cook for another 2-3 minutes.
  3. Slice the tomatoes in half and add to the pan. Cook until kale has soften. Should only take 2-3 minutes more.
  4. Whilst the kale is cooking, in another small frying pan add a little oil and bring to a medium heat.
  5. Add the slices of halloumi and cook until it starts to golden on each side. Turn when needed.
  6. Put the kale into a bowl, top with the halloumi and drizzle with balsamic glaze. If you want to add a little spice sprinkle with chilli flakes. Enjoy!
