Sweet Potato and Mackerel Fish Cake Recipe

I bought some mackerel on a whim a few backs, found it whilst I was rummaging through the reduced section on a Friday night (wild I know!) I wasn't quite sure what to do to with it so after much deliberating I had a go at making some fish cakes. I've since made these several times as they are so easy and yummy! Hope you enjoy!

Ingredients

1 large sweet potato or white potatoes
150g cooked mackerel (flavoured or unflavoured)
2-3 handful of peas
Salt and Pepper
Additional seasoning (optional)
2 pieces of bread
1 egg
flour
Vegetables to serve

Method

  1. Peel and roughly chop the potato, add to a pan of simmering water and cook until soft

  2. Drain and mash the potato. Leave to cool, you can pop it in the fridge to speed it up

  3. Once the potato is cool, flake the mackerel into the potato adding the cooked peas and mix well

  4. Season with salt and pepper and extra seasoning if required

  5. Take a golf ball sized amount of the mixture and shape in to a round patty (I usually get around 6-8 depending on how big you make them)

  6. Blitz the bread crumbs in a food processor and place on to a plate.

  7. Whisk the egg in a large shallow dish.

  8. Put the flour on a plate, enough to dust each patty.

  9. Coat each patty in the flour, dip into the egg and roll in the breadcrumbs.

  10. In a large saucepan, add some olive oil and place on a medium heat. Cook the fishcakes, flipping them until they a golden.

  11. Cook the vegetables of your choice, serve and enjoy!
