Gnocchi with Tomato and Vegetable Sauce Recipe

I love pretty much all kinds of food but Italian has to be up there in my top three! I was craving all the carbs after a sweaty spinning session yesterday morning but wanted a change from the usual pasta and then remembered GNOCCHI! I absolutely love gnocchi and don't have it that much but it makes it even more satisfying when I do. I rustled this dish up in about 20 minutes. It's super simple and yummy. Enjoy!

Ingredients - Serves 2


5-6 mushrooms
1/4 red bell pepper
2 large handfuls spinach
1/4 red onion
150-200g tomato passata
1tsp chilli powder (optional)
2 garlic cloves crushed
Gnocchi
Parmesan cheese for topping

Method

  1. Chop the onion in small pieces and add to a frying pan with a little coconut oil, on a medium heat
  2. Cook the onions until soft then add the garlic, stir for a couple of minutes
  3. Dice the red pepper and add to the pan cook for a further 2-3 minutes
  4. Slice the mushrooms and add to the pan
  5. Once the mushrooms are cooked add the tomato passata and chilli powder, if using. You can add more or less tomato passata depending on how thick or running you like your sauce
  6. Heat through on a low heat, stirring occasionally
  7. Cook the gnocchi according to the instructions. I usually use 1 large handful per serving.
  8. Add the gnocchi to a plate and top with the sauce
  9. Finish with a sprinkling of parmesan cheese and enjoy!
