Turkish Eggs Menemen

If you follow me on social media, you’ll know I love eggs and I love brunch food. It doesn’t have to be at brunch time, you’ll catch me eating shakshuka for dinner too. I’ve recently got back into my version of Turkish eggs during the week. I find it keeps me full on my busy days and is an easy way to get some vegetables in at breakfast time as well. This is my take on menemen, chef’s please don’t come at me if it’s not quite up to scratch but I love it and hope you do too.

Ingredients

2 eggs
half tin chopped tomatoes
quarter green pepper
quarter red onion
1 small green chili (or any fresh chili)
2 handfuls spinach
1 tsp paprika
half tsp cayenne pepper
salt and pepper to season
feta or goats cheese to top

Method

  1. Finely chop the onion, add to a frying pan with some olive oil on a medium heat.

  2. Chop the pepper into small chunks and add to the onions once softened.

  3. Cook for a few minutes more until the onions are cooked through. Add the paprika, cayenne pepper and season with salt and pepper. Cook for a further 2 minutes.

  4. Add the chopped tomatoes and heat through, stirring well.

  5. Add the spinach. Once wilted crack the two eggs into the pan and break the yolk. Stir occasionally to ‘scramble’ the eggs and mix through the sauce.

  6. Once the eggs are cooked to your liking top with a crumbling of feta and serve with some toast or a bagel. Enjoy!
