Caribbean Coleslaw Recipe

Want to spruce up your salads or add a something a little extra to a BBQ spread? This Caribbean inspired coleslaw recipe will do just that. Super crunchy with a touch or heat. If spice isn’t your thing you can easily leave out the chili. Enjoy!

Ingredients

1/4 white cabbage
1/4 red cabbage
1/2 mango or 2 large slices of pineapple
Handful fresh coriander
1/2 red chili
1tsp honey
Lime juice
salt and pepper

Method

  1. Finely shred the red and white cabbage and add to a mixing bowl

  2. Peel and thinly slice the mango or pineapple and add to the cabbage

  3. Roughly chop the coriander and dice the chili into tiny pieces and mix into the cabbage well

  4. Drizzle over the honey, add a good sprinkling of lime juice and season with a little salt and pepper. Mix well and enjoy!
