Homemade Vegetable and Tomato Pasta Sauce

Pasta has to be one of my favourite meals, it’s easy to cook, tastes yummy and there are so many different things you can do with it. However, how often do you go for the pre-made jars of sauce just because of convenience? The majority are pretty cheap to purchase but can often be high in salt and added sugar. I’ve created this veggie pasta sauce from scratch, and you’ll likely already have all the ingredients in your cupboard ready to go! It’s also a great way to pack in lots of those veggies! I’ve listed the vegetables I’ve used but feel free to throw in some others and get creative. If you’re a meat lover you can easily add some grilled chicken or chunks of chorizo to this recipe too. Try mixing it up with different types of pasta as well, it works well with gnocchi and spaghetti.

Meal prep is big on my agenda with eating the majority of my meals on the go at work and this works perfectly to keep me fueled for the day. Why not make this for dinner and save the leftovers for lunch the following day? Enjoy!

Ingredients
250-300ml tomato passata
1/2 onion diced
6-8 large mushrooms sliced
1 carrot sliced into batons
1/4 broccoli cut into small florets
1/2 red pepper diced
2-3 large handfuls spinach
1 tsp paprika
1/2 cayenne pepper
pinch of mixed herbs
pinch of chilli flakes
1 crushed garlic clove
pasta of your choice

Method

  1. Add a drizzle of olive oil to a deep frying pan and heat on medium

  2. Once hot add the onions, broccoli and carrots. Cooked until the carrots and broccoli start to soften

  3. Add the red pepper, mushrooms and garlic, stir occasionally until mushrooms are cooked through

  4. Add the tomato passata with the herbs and spices, mix well.

  5. Simmer on a low heat for around 10 minutes. Whilst the sauce is simmering, cook your pasta, spaghetti or gnocchi.

  6. Add the fresh spinach, cook until spinach is wilted.

  7. Drain your pasta and top with the sauce. Add a sprinkling of cheese to finish. Enjoy!
