Sausage and Sweet Potato Casserole Recipe

As the nights get longer and with winter firmly set in there's nothing I enjoy more than some home cooked comfort food. This casserole dish is perfect for those weekend nights in cuddled up in front of the TV with a good movie. It's super easy to prepare and can be popped in the oven whilst you flick through Netflix trying to find something to watch. (Anyone else do this for longer than you actually watch it? No? Just me then..) 

This recipe serves four people but could easily be cut down for just the one or two meals. I usually make this in bulk and keep any left overs in the fridge for lunch the next day. That's if there's any left once the house mates have got their hands on it! I've made the recipe with potato wedges but it works just as well with mash. You can also add some chunks of chorizo or bacon for some extra flavour! Hope you enjoy this one as much as I do! 

Ingredients - Serves 4

8 sausages (I usually use Cumberland but any works well)
1 tin of baked beans
1 large carrot
1/2 red onion
4 medium sweet potatoes
1 beef oxo cube
1 vegetable oxo cube
Worcester sauce
1 heaped tsp beef gravy powder
2 garlic cloves crushed
squeeze of tomato puree

Method

  1. Pre-heat the oven to 180 degrees (fan heated) 
  2. Add the sausages to a large casserole dish
  3. Peel and chop the carrot. (I usually slice the carrot to roughly 1/2cm thick and cut them in half) Add to the dish. 
  4. Chop the red onion into small chunks and add to the dish. 
  5. Add the full tin of beans to the dish
  6. To make up the sauce crumble both oxo cubes into a mug, add the gravy powder and garlic. Fill the mug with water (this can be cold) and stir the mixture thoroughly. Pour over the beans
  7. Add a good squeeze of tomato puree and stir the mixture, beans and sausages so evenly distributed
  8. Pop the dish in the oven for 30-40 minutes, stirring every 10 minutes or so
  9. Whilst the casserole is cooking cut the sweet potatoes into wedges or chunks. Drizzle with a little olive oil and add to a baking tray. Add to the oven after the casserole has been cooking for 10 minutes 
  10. If you wish, prepare any vegetables and cook accordingly (I usually have a few florets of broccoli)
  11. Serve and enjoy!
