Easy Broccoli, Spinach and Bacon Pasta

This recipe is my favourite go to when I’m craving the carbs! It’s super easy and quick to make so perfect for refueling after the gym. If you’re anything like me and usually head to gym after work I very rarely get back in the comfort of my own home before 8pm. The last thing I want to do is slog away in the kitchen and it can be all to tempting to reach for the quick fixes that aren’t always the healthiest option. This meal takes around 15 minutes from start to finish and never fails to hit the spot! Enjoy!

Ingredients - Serves 1

Whole wheat Pasta - 2 handfuls
Broccoli florets - 1 large handful
Bacon (optional) - 1 slice
Spinach - 2 handfuls
Crushed garlic - 1 clove
Grated parmesan or feta chunks

Method

  1. Cut the bacon into small squares. (Top tip: use a pair of scissors, it's much easier than a knife. I also tend to remove any fat too)
  2. Cook the pasta following the instructions on the packet. (I add a pinch of salt to the water for taste)
  3. Whilst the pasta is cooking, steam the broccoli (I use a steamer basket) and fry the bacon with the crushed garlic. (I like my broccoli slightly crunchy so don't steam it for too long but you can cook it to your preference)
  4. Once the pasta is cooked drain and add to the frying pan along with the broccoli and spinach.
  5. Using the water from steaming your broccoli add a around 50ml of liquid to the frying pan. (This way you get the goodness and flavour from the broccoli. You can add more liquid if necessary)
  6. Stir until the spinach is wilted and serve.
  7. To finish grate parmesan or sprinkle feta over the top and enjoy!
